  • 1 cup Heavy Cream half and half or whole milk can be used
For Seasoning
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 1 teaspoon Onion Powder to taste
  • 1 teaspoon Italian Seasoning to taste
  • 1 teaspoon Paprika to taste
For Enrichment
  • 1 cup Matchstick Carrots fresh or frozen
  • 1 cup Uncooked Macaroni Noodles any small pasta shape works
For the Cheesy Finish
  • 1 cup Shredded Cheddar Cheese can experiment with different varieties
  • 1 cup Shredded Parmesan Cheese Pecorino Romano can be substituted

Method
 

Step-by-Step Instructions
  1. Heat the olive oil in a large pot over medium-high heat for about 1 minute until shimmering.
  2. Add the ground beef and diced onion, sauté for 5-7 minutes until the beef is browned and onions are translucent.
  3. Stir in the minced garlic and sauté for 1 minute.
  4. Sprinkle in the flour and stir constantly for 2-3 minutes to coat the meat and onions.
  5. Pour in the chicken broth, stir to prevent lumps, and bring to a gentle simmer for about 5 minutes.
  6. Mix in the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika.
  7. Add the matchstick carrots and uncooked macaroni noodles, increase heat slightly and boil for 1 minute.
  8. Reduce heat, cover, and simmer for 20 minutes, stirring occasionally.
  9. Incorporate the cheddar and parmesan cheese, stirring until melted and creamy.
  10. Ladle the soup into bowls and serve immediately.
