  • 1 teaspoon black pepper Adjust to taste.
For the Vegetables
  • 1 cup bell pepper Can substitute with other vegetables.
  • 1 medium onion Red or yellow can be used.
  • 2 cloves garlic Minced.
For the Sauce
  • 1 can diced tomatoes Can substitute with fresh tomatoes.
  • 2 cups chicken broth Vegetable broth can be used.
  • 1 cup heavy cream Can substitute with coconut milk.
  • 1/2 cup Parmesan cheese Nutritional yeast can be used for dairy-free.
For the Pasta
  • 8 ounces penne pasta Any pasta can be used based on preference.
For Garnish
  • 1 tablespoon fresh parsley Can replace with basil.

Method
 

Cooking Instructions
  1. Rub chicken breasts with olive oil and Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Brown the seasoned chicken in a skillet over medium heat for 2-3 minutes on each side.
  3. Place the browned chicken in the slow cooker.
  4. Layer sliced bell pepper, chopped onion, and minced garlic on top of the chicken.
  5. Add diced tomatoes and chicken broth to the slow cooker, scraping the skillet for any brown bits.
  6. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is tender.
  7. Shred the cooked chicken with two forks and return it to the slow cooker.
  8. Stir in heavy cream and Parmesan cheese until fully integrated.
  9. Cook penne pasta separately until al dente, then add to the slow cooker.
  10. Mix well and heat on low for an additional 15-20 minutes.
  11. Serve in bowls, garnished with fresh parsley.
